Ingrédients
- 600 gr de farine blanche ou 400 g de farine blanche et 200 g de farine bise
- 36 cl d'eau tempérée (+ ou – 1 cl )
- 20 g de levure fraîche
- 10 g de sucre de canne brut
- 30 g d'huile neutre (colza ou tournesol)
- 12 g de sel
- 1 œuf pour dorer (facultatif)
Préparation
- Dans le bol du pétrin, ajouter l’eau, la levure et le sucre, mélanger un peu.
- Ajouter la farine et commencer le pétrissage en 1ère vitesse pendant 3 minutes ou jusqu’à ce que la pâte se soit formée.
- Actionner la 2ème vitesse et ajouter le sel. Ensuite faire couler l’huile en un mince filet et continuer le pétrissage pour 5 à 6 minutes. La pâte doit être lisse et élastique.
- Si vous n’avez pas de pétrin mécanique, il est tout à fait possible de pétrir manuellement au moins pendant 15 minutes, jusqu’à ce que la pâte devienne bien souple.
- Transférer la pâte dans un grand bol et le recouvrir d’une feuille plastique ou d’un torchon humide et laisser lever pendant environ 90 minutes, + ou – 10 minutes selon la température de saison.
- Une fois la pâte levée, la diviser en 2, replier les pâtons deux à trois fois, les façonner légèrement en long et les laisser reposer sous un torchon humide pendant 15 minutes.
- Reprendre les pâtons et les diviser en 12 morceaux (poids d’env. 85 g) et les bouler.
- Les remettre sous le torchon humide pendant encore 10 minutes.
- Façonner les pâtons ronds en long, environ 13 cm, et aligner deux fois six morceaux (se touchant) sur une plaque recouverte d’un papier cuisson. Cela permettra de fabriquer deux pains tessinois.
- Recouvrir les pains d’un torchon humide et les laisser pousser pendant encore 60 minutes à 24-25°C.
- Une fois bien levés, les badigeonner d’eau ou, c’est ma préférence, les dorer avec un jaune d’œuf mélangé à une goutte de lait.
- Avec une paire de ciseau, tailler chaque morceau au centre des pains et les glisser dans le four à air chaud préchauffé à 200°C avec si possible un peu de vapeur.
- Les faire cuire environ 25 à 30 minutes au total mais après 15 minutes, baisser la température à 180°C. Les pains doivent être bien dorés mais rester clairs.
- Refroidir sur une grille avant de vous régaler.
Ce pain est excellent. Il est léger, aérien et très savoureux. À refaire !

- 450 g de farine bise T80
- 2,5 c à c de levain fermentescible
- 290 g d'eau
- 2 c à c de sel
- 150 g de noix
Instructions
- Mélanger la farine, le sel et le levain
- Ajouter l'eau peu à peu en pétrissant (au robot ou à la main)
- Lorsque la pâte est souple et homogène, ajouter les noix et pétrir pour les répartir correctement
- Laisser reposer au chaud, récipient couvert d'un linge, 2 heures
- Au bout de ce temps, rompre la pâte et former le pain en boule pour une cocotte ronde, allongé pour une cocotte ovale
- Mettre une feuille de papier sulfurisé au fond de la cocotte et déposer le pain
- Couvrir, laisser lever 45 minutes
- Inciser le pain, couvrir, placer dans le four froid et cuire 50 minutes à 240°C
- Laisser refroidir le pain à l'air sur une grille
Notes :
- j'ai fait cuire ce pain directement sur la plaque sans utiliser de cocotte.
- j'ai préchauffé le four avant d'enfourner ; j'ai donc réduit un peu le temps de cuisson.
Note : cette recette vient des notes de ma grand-mère. Elle avait récupéré cette recette auprès de sa voisine et amie alsacienne.

- 150g de pruneaux (faire gonfler dans de l'eau chaude ou du thé).
- 150g de figues sèches.
- 75g de dattes.
- 75g d'amandes.
- 75g de noisettes.
- 75g de noix.
- 75g de raisins Smyrne.
- 10g d'écorce de citron confite.
- 10g d'écorce d'orange confite.
- 10g d'angélique confite.
- 100g de sucre en poudre.
- 1 cuillère de kirsch ou de rhum.
- 1 pointe de couteau de cannelle.
- 250g de pâte à pain.
Instructions
- Couper tous les fruits en morceaux (attention à ne pas les faire trop petits).
- Incorporer les dans la pâte préalablement levée.
- Pétrir jusqu'à la disparition complète de celle-ci dans les fruits.
- Former un pain long.
- Cuire à feu doux entre 30 et 45 minutes.
Le pain est bon mais il est très similaire à d'autres recettes que je préfère.

- 1 cup warm water
- 2 tsp yeast
- 2½ cups flour, plus more for dusting work surface
- 1 Tbsp olive oil
- 1 tsp salt
Ingredients for the filling
- ~½ cup pesto, purchased or homemade
- 2 Tbsp grated parmesan
Instructions
- Place warm water in the bowl of your stand mixer fitted with the dough hook and sprinkle yeast over top.
- Let sit 10 minutes - if the yeast doesn't get frothy or swell, toss it and go buy new yeast.
- Add the flour, oil, and salt and turn the mixer to low.
- Knead the dough for 5 minutes until smooth and elastic - after about 2 minutes, the dough should completely clean the bottom and sides of the bowl. If it does not, add additional flour, one spoonful at a time until it does.
- Form the dough into a smooth ball and transfer to a lightly greased bowl (I just use the mixer bowl) and let rise until doubled (~1 hour on the countertop, quicker in a slightly warmed oven).
- Preheat oven to 425.
- Lightly flour your work surface.
- Gently stretch and elongate your dough round.

- Roll into a rectangle ~18x12 inches.
- Spoon pesto over top, spreading evenly, leaving a clean ½-inch border around the edges.

- Roll the long side of the dough to you and pinch the seam closed.

- Transfer to your parchment-lined or cornmeal-dusted baking sheet.
- Cut the dough in half down the length of the dough and pinch the top ends together.
- Working quickly, braid the two pieces, trying to keep the pieces twisted so the cut ends remain on top (this is what makes the bread pretty).

- When you get to the bottom, pinch the ends together and wrap into a wreath.

- Transfer to your baking sheet and let rest for 30 minutes.
- Top with shredded parmesan and bake for ~25 minutes, until golden brown.
- Let cool slightly and slice to serve.

C'est vraiment un pain parfait pour faire un sandwich !

Ingrédients (6 portions)
- 220 g de farine
- 20 cl d’eau tiède
- 2 cuillères à café de levure boulangère
- 2 cuillères à café de levure chimique
- 1 cuillère à soupe de sucre
- 1 cuillère à soupe d’huile d’olive
- 1 pincée de sel
Préparation
- Faites prendre la levure boulangère dans le bol d’eau tiède pendant environ 15 minutes
- Une fois que la levure a pris, mélangez tous les ingrédients dans un saladier et malaxez jusqu’à obtenir une pâte consistante (si nécessaire rajoutez un peu de farine)
- Sur une surface préalablement farinée, pétrissez votre pâte pendant une dizaine de minutes
- Formez une grosse boule de pâte, badigeonnez-la d’huile et faîtes-la reposer pendant deux heures à température ambiante dans un saladier recouvert d’un linge
- Votre pâte devrait avoir doublé de volume, pressez-la doucement pour vider l’air, puis divisez-là en 6 parts égales
- Prenez une part de pâte, roulez-la en boule et aplatissez-la pour obtenir un disque (légèrement oval si possible d’ailleurs) d’environ 0,5 cm d’épaisseur
- Couvrez la moitié du disque de pâte avec un bout de papier cuisson et repliez l’autre moitié du disque par dessus
- Répétez cela avec les 5 autres parts de pâtes
- Placez les parts sur le tamis de votre cuit-vapeur (personnellement, je les place sur des petits bouts de papier cuisson mais ce n’est pas obligatoire) et faîtes cuire à la vapeur pendant 10 minutes
Ingrédients pour la pate
- 200 g de farine de blé
- 125 g de yaourt nature à température ambiante
- ½ cuillère à café de baking powder ou poudre levante
- 1 cuillère à café de sucre
- ¼ cuillère à café de sel
- 3 cuillères à soupe d’huile
- 7 cl d’eau tiède
- de la farine en extra pour l'étalage de la pâte
Ingrédients pour parfumer les nans
- 1 gousse d’ail râpée
- quelques feuilles de coriandre hachées
- du beurre clarifié, le ghee, 2 cuillères à soupe
Instructions
- Pour commencer ajouter l’agent levant à la farine, le sucre et l’huile ainsi que le yaourt. Les incorporer puis ajouter le sel. Commencer à y ajouter de l’eau à petite dose.
- Quand cela ressemble à une boule ajouter le reste d’eau. (Moi j’aime avoir une pâte bien souple, j’ajoute un peu plus d’eau, mais attention cela rend la pâte un peu plus difficile à manier !)
- Maintenant sortir la pâte du récipient pour la travailler. Si elle colle trop, ajouter de la farine. Travailler la pâte quelques secondes puis faire un pâton. Badigeonner avec un peu d’huile et déposer à nouveau la pâte dans un récipient.
- Couvrir avec un torchon humide et réserver près d’une source de chaleur, en été au soleil et en hiver près du radiateur. Il faut la laisser au minimum deux heures.
- Le mieux c’est de préparer sa pâte la veille pour le matin ou le matin pour le soir.
- Avant de commencer à rouler la pâte, préparer le ghee en y ajoutant la coriandre et l’ail.
- Quand la pâte est bien reposée, pas collante et bien souple, la diviser en six et faire des boules. Fariner le plan de travail et rouler les nans. Il ne faut pas trop les étaler, s’ils sont trop fins, ils ne gonfleront pas. Il faut garder 2 à 3 millimètres d’épaisseur.
- Chauffer une poêle et la couvrir pour garder la chaleur. Disposer le pain dans la poêle bien chaude. Baisser le feu et couvrir.
- Quand le nan commence à gonfler, le tourner et le laisse cuire encore une à deux minutes.
- Finir la cuisson directement sur la flamme pour donner un bel aspect grillé.
- Enfin badigeonner généreusement le nan de ghee juste avant de le déguster.

Ça faisait longtemps que je devais essayer ça.
J'en suis un peu déçu car c'est assez sec. Le goût est très bon, mais soit je perds la main, soit il manque quelque chose.
Une belle recette qui donne de superbes pains.
J'aime bien la technique du Tangzhong, ça donne une belle texture à la mie.

- 20 g (2tbsp) strong white bread flour
- 100 ml water
Ingredients for the dough
- 350 g (scant 3 cups) strong white bread flour
- 7 g (2 tsp) fast action yeast
- 1 tsp salt
- 50 g (1/4 cup) caster sugar
- 1 tbsp milk powder (optional)
- 125 ml (1/2 cup) full fat milk
- 1 large egg
- 50 g (scant 1/4 cup) softened butter
Ingredients for the glaze
- 1 egg, beaten with a splash of milk
- sesame seeds
Instructions
- To make the tangzhong, place the flour in a small saucepan and gradually whisk in the water. Place over a medium heat and cook, whisking constantly until it has thickened to a wallpaper paste-like consistency. Remove from the heat, scrape into a bowl and cover with clingfilm directly on the surface, set aside to cool.
- Place the flour, yeast, salt, sugar and milk powder in the bowl of a stand mixer fitted with the dough hook, lightly stir together and make a well in the centre. Add the egg, milk and tangzhong to the well and mix on a low speed until it comes together into a dough.
- Add the butter and mix on a high speed until the dough is very stretchy and comes away from the sides of the bowl, this can take about 15 minutes, even in a stand mixer.
- Transfer the dough to a lightly greased bowl, cover with clingfilm and either place somewhere warm to rise until doubled in size, about 1-2 hours, or in the fridge overnight.
- Line a baking sheet with baking parchment. Divide the risen dough into 8 equal pieces and shape each piece into a ball on a lightly floured surface. Spread the balls out well spaced apart on the baking sheet and loosely cover with oiled clingfilm. Leave to rise for about 1 hour until puffy.
- Meanwhile, preheat the oven to 200C/400F/gas mark 6. Brush the risen buns with the beaten egg and sprinkle with sesame seeds. Bake for about 20 minutes until deep golden, the internal temperature should reach 94C.
- Transfer the buns to a wire rack to cool before serving, store in an airtight container.
Un très bon pain. Tellement bon que je n'ai pas eu le temps de le prendre en photo avant qu'il soit fini.

- 343g / 2¾ Cups Plain Flour
- 1tsp Salt
- ¼tsp Onion Powder
- 2¼tsp Instant Yeast
- 6tbsp Unsalted Butter
- 59ml / ¼ Cup Water
- 79ml / ⅓ Cup Milk
- 2 Large Eggs
Ingredients for the garlic butter
- 113g / ½ Cup Unsalted Butter
- 1 Garlic Bulb
- Parsley
- ¼tsp Cayenne Pepper (optional)
Instructions
- Mix together ¾ of the flour with salt, sugar, onion powder and yeast. In a saucepan melt the butter, milk and water and leave to cool slightly before pouring into the dry mixture. Kneed the dough for 3 minutes before adding in the eggs. Once combined, add in the remaining flour and kneed for another 3 minutes. Flour your work surface and bring the dough together. Place in an oiled bowl and proof for one hour.
- Peel the garlic and add to a food processor along with the parsley and wiz until everything is finely chopped. Melt the butter and and mix together with the garlic and parsley. For an extra kick, add in a 1/4tsp of Cayenne Pepper.
- Sprinkle the base of a baking dish with breadcrumbs and brush some of the garlic butter around the edges. Place the dough balls in the baking dish and cover with cling film. Leave to sit for 30 minutes to proof before brushing the remaining garlic butter on top. Cover with foil and bake at 176 degrees C for 30 minutes.

Je le referais probablement mais je ferais plus de boules. J'en avais fait 32, mais je pense que ce n'est pas assez.

Ingredients
- 2 teaspoons active dry yeast
- 1 ⅓ cups barely warm water
- 2 tablespoons extra-virgin olive oil
- 2 teaspoons salt
- 3 ½ cups all purpose (or bread) flour
- ¼ cup butter, melted
- 1 tablespoon dried parsley flakes
- 2 cloves garlic, minced
- ¼ cup freshly grated Parmesan cheese
Instructions
- In a large mixing bowl, stir together the yeast and water. Let sit 5 minutes until yeast is foamy. Mix in the olive oil, salt, and flour. If you have a stand mixer, attach the dough hook and knead the dough for 5-6 minutes, or until elastic. If you are doing this by hand, knead the dough on a lightly floured surface until dough is elastic, 7-10 minutes. Transfer dough to a lightly oiled bowl and cover with a clean kitchen towel. Allow to rise for 1 1/2 to 2 hours, or until dough is doubled in size.
- In a small bowl, combine melted butter, parsley flakes, and minced garlic. Set aside.
- Punch down the dough. Tear off small pieces of dough (roughly the size of the bowl of a medium spoon), coat in the butter mixture, and place in the bottom of a bundt pan. Repeat this process until you have one layer of dough balls. Sprinkle on 1/3 of the Parmesan cheese. Continue layering the dough balls and cheese until you have 3 layers. Cover the pan with a clean towel and allow to sit until dough has doubled in size, 20-30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake for 25 to 30 minutes, or until bread is golden brown. Serve hot with a side of marinara or tomato sauce.

- 1 Tbsp or 1 Packet Red Star Platinum yeast
- 2¾+ Cups unbleached flour

- 1 Tbsp. olive oil
- 1 Tbsp. melted butter
- 2 cloves garlic, finely crushed
- 2 Tbsp. finely chopped fresh parsley
Instructions
- Mix bread ingredients according to the instructions on the EZ DOH bucket.
- Add one or two tablespoons more water as needed if dough is very stiff.
- After 1st rise, divide the dough into 15-20 even-sized pieces.
- On a lightly-oiled board with lightly oiled hands, roll each piece into 5” rope.
- Tie into a knot and place on a greased or parchment-lined baking sheet.
- Cover and let rise briefly.
- Bake in preheated 400 oven for 12-15 minutes, until golden.
- While the knots are baking, combine the baste ingredients and warm until garlic is softened.
- Add chopped parsley.
- While rolls are warm, baste.
Le pain est vraiment aérien. C'est un régal avec un peu de beurre et de miel.

Ingredients
- 500g Strong white flour (known in the US as bread flour and 1.1lb for my American cousins. You could use 1lb and drop the water to around 250ml)
- 4 heaped teaspoons dry milk powder (I use Tesco Value skimmed milk powder)
- 1.5 teaspoons salt
- 2 teaspoons sugar
- 2 teaspoons baking yeast
- 300ml luke-warm water
Instructions
- Grab a mixing jug and fill with 300ml warm water (luke warm)
- Measure out the 2 teaspoons of yeast into a mixing jug and give it a stir.
- Pop a very small pinch of sugar in with the mixture and 1 last stir around.
- Cover with a clean tea towel or similar. While we're waiting for the yeast mixture, proceed to the next step.
- After around 10 minutes, the mixture should have a frothy head on it like a good beer (like pic 2). It's ready to use.
- Grab a mixing bowl, pop it on some scales and add the dry ingredients.
- Pop the bowl on the stand, attach the dough hook and just give the ingredients a quick 'dry' stir.
- While the mixer is still running on a low setting, grab your yeast mixture and slowly pour all of it in.
- Mix on the low setting for around 6-7 minutes until it's become elastic and dough like. Whilst it's mixing, lightly grease a 2nd mixing bowl. (Make sure your bowl is big enough for the dough to expand into as it'll double in size.
- Take the dough out and place onto a lightly floured surface. I always like to hand knead for the last 30 seconds/minute to ensure the consistency is right. With this load, I didn't use hardly any flour whilst hand kneading. Knead it into a ball and place into the greased bowl. Cover with a clean tea-towel or clingfilm/food wrap and leave somewhere warm for an hour or until doubled in size.
- Tip the mixture out onto the lightly floured surface and gently knead it again (doesn't need much - around 30 seconds to a minute). Try to knead it into the shape of the loaf you're making. I'm using a greased 2lb loaf tin, so I've kneaded the shape into an oval.
- Place the dough into the greased loaf tin. TOP TIP (dust the top with flour to stop the top sticking when rising. Loosely cover ( I used kitchen towel this time) and leave for around 40 mins.
- Check the progress of the loaf after 40 minutes. It should be almost there. Switch on and preheat your oven to:175 degrees C (fan oven), 190 non-fan or 375 degrees F. Come back in 15-20 mins.
- Now it's time to pop it in the oven. It should take around 30-35 minutes. The top should be a golden brown and quite solid at this point. A sure-fire way to check it's cooked through is once you've taken it out of the loaf tin, flick the middle of the bottom of the loaf. The sound should be hollow.
Vraiment facile à faire !
J'ai fait des tests en remplaçant la farine blanche par de la farine complète et le résultat est aussi bon.
À refaire !
La pâte est très bonne ! Elle sort croustillante du four et elle ramolli peu à peu.
La garniture est vraiment très savoureuse !
J'ai utilisé de la levure de boulanger à la place de la levure deshydratée. J'ai utilisé du pesto à la place du basilic. Miam !
